Giada's Stuffed Baby Peppers



We are on vacation once again, however I don't have an internet connection (what kind of rental house in this day and age doesn't offer wifi?!), so I'm just typing this up and saving it and will upload once we're home at the end of the week. We're on the opposite coast this time, spending a week on the Central Coast area of CA with my husband's family. Once again, it's cloudy. At least in CA the clouds usually burn off, although the past two days they sadly have not. THe husband and I are spending the day wine tasting in Paso Robles while his lovely sister watches our kids for us, so that's probably a sure sign the sun will be shining on the beach all day. Oh well, I'll be tasting wine with the love of my life, so I can't complain too much.

You may remember that every year for my grandma's birthday, she likes to have a happy hour birthday party where we feast on all sorts of appetizers and wine. I always spend weeks trying to figure out what my contributions will be. I had seen these in a Giada cookbook when I was searching for dinner ideas and thought they'd be a great contribution. I don't think I've ever gone wrong with a Giada recipe.

Giada's Stuffed Baby Peppers

Vegetable oil cooking spray
2 tablespoons olive oil
3 ounces thinly sliced pancetta, chopped into 1/4-inch pieces
1/2 medium onion, finely chopped
3/4 cup ricotta cheese
1/3 cup grated Parmesan
1/2 cup frozen petite peas, thawed
Kosher salt and freshly ground black pepper
24 (2 to 3-inch long) sweet baby peppers

Place an oven rack in the center of the oven and preheat to 350 degrees F. Spray a baking sheet with vegetable oil cooking sprayand set aside.

In a medium skillet, heat the oil over medium-high heat. Add thepancetta and cook, stirring frequently, until brown and crispy, about 5 to 7 minutes. Using a slotted spoon, remove the pancetta anddrain on paper towels. Add the onion to the pan and cook until translucent and soft, about 5 minutes. Set aside to cool for 10 minutes.
In a medium bowl, combine the onion, pancetta, cheeses, and peas. Season with salt and pepper, to taste.

Using a paring knife, cut 1/2-inch from the stem-end of the peppers. Remove the seeds and veins. Using a small dessert spoon, fill each pepper with the ricotta mixture. Place the filled peppers on the prepared baking sheet and bake for 15 to 18 minutes until the peppers begin to soften. Remove from the oven and cool for 10 minutes.
Arrange the peppers on a platter and serve.

We had an event for the husband's work before we went to my mom's for the party, so I assembled the peppers ahead of time and just kept them in a cooler while we were at the event. When it was party time, I put them on a cookie sheet and popped them in the oven. Super easy to get them prepped ahead of time!

These were really tasty, and they're low carb which I need to keep in mind for when we're having low carb weeks, or just to take to things where I know it will be a carb-fest. Let me tell you something about petite peas though--they're a scam!! I stood at the freezer case of my grocery store looking for petite peas. There was one brand that sold them--at three times the cost of a bag of regular peas. But, it was for my grandma's 94th birthday so I figured I'd splurge. You know what? They were the same freakin' size as regular peas. Well played, Birds Eye Vegetables, well played. So save yourself some money and use regular peas.

I will definitely be making these again. There were quite a few leftover (there's always a ton of food at this party), and the husband and I liked eating them cold even. He took them as a side in his lunch for a couple days after the party. Thanks, Giada, for another great recipe!!

Grilled Beef Fajitas

I recently picked up quite a bit of flank steak on sale, and I was kind of tired of marinating it in something and throwing it on the grill. Okay, not really, but I wanted to do something different with it. I once again pulled out my trusty Cook's Illustrated 2009 Summer Grilling magazine for an idea. Grilled Beef Fajitas sounded pretty darn tasty and worthy of a try.

1 large flank steak (about 2-1/2 pounds)
1/4 cup juice from 2-3 limes
Table salt and ground black pepper
1 very large onion (about 14 ounces), peeled and cut into 1/2-inch-thick rounds (do not separate into rings)
2 large red or green bell peppers, seeded, ribbed, and cut into large strips
16 flour tortillas

Turn all burners to high on gas grill and heat with lid down until very hot, about 15 minutes. Use grill brush to scrape cooking grate clean.

Generously sprinkle both sides of steak with lime juice and salt and pepper. Grill steak with lid down until well seared and dark brown on one side, 5-7 minutes. Using tongs, flip steak; continue grilling until interior of meat is slightly less done than you want it to be when you eat it, 2 to 5 minutes more for rare or medium-rare (depending on heat of fire and thickness of steak).

Transfer meat to cutting board; cover loosely with foil and let rest for 10 minutes.

While meat rests, lower grill burners to medium heat. Grill onions and peppers, turning occasionally, until onions are lightly charred, about 6 minutes, and peppers are streaked with dark grill marks, about 10 minutes. Remove vegetables from grill and separate onion rounds into rings and cut peppers into long, thin strips; set aside. Arrange tortillas around edge of grill; heat until just warmed, about 20 seconds per side. Take care not to dry out tortillas or they will become brittle; wrap tortillas in a towel to keep warm and then place in basket.

Slice steak very thin on the bias against grain; adjust seasonings with salt and pepper. Arrange sliced meat and vegetables on a large platter; serve immediately with tortillas, guacamole, and salsa.

Serves 6 to 8.

I really love fajitas. I think maybe it stems from being fascinated with the sizzling fajita plates that would go by in Mexican restaurants when I was little. Or I just liked Mexican food. Or grilled Mexican food. Anyway, I didn't really change this up a lot. I had never grilled all portions of fajitas before. A lot of times I'll grill the meat or protein for them but do the peppers and onions in a skillet on the stove. Well...NO MORE! The grilled vegetables were amazing. They added so much flavor to the finished fajita with the hint of smokiness the grill gave them. Oh man...TASTY! This is definitely my go-to way to prepare fajitas going forward!

South Beach Stuffed Peppers

I love stuffed peppers. The husband used to not like green peppers (I don't know, he may still not like them, but I love them so he's forced into eating them), so I never had them. I'd buy the Stouffer's frozen peppers and take in my lunch to work or keep on hand at home for when I was on my own for dinner. I've made stuffed peppers a few times (my friend Jen has a really good stuffed peppers recipe), so I was excited to see a recipe for them that didn't have rice or pasta as part of the stuffing.

4 bell peppers
olive oil
1 lb ground turkey
1 stalk celery, chopped with top
1 -2 garlic clove, minced
1 small onion, chopped
1 tablespoon minced fresh parsley
1 tablespoon Worcestershire sauce
1 teaspoon spike all purpose seasoning (for zest)
28 ounces ground peeled tomatoes
1/2 cup shredded cheese (or more)

Wash the peppers, cut the tops off, and place in oiled glass dish. Cover and microwave the peppers for 5 minutes.

Saute the veggies and ground turkey with a dollop of olive oil. (I chop up the usable remainders of the pepper tops as well). Add the tomatoes and cook for 3-4 minutes to evaporate some of the liquid.

Stuff the peppers and top with cheese. Bake at 350 for 10 minutes or until the peppers are soft and the cheese is toasted.

Add Ins: you could add cooked rice or stir in extra cheese to the mixture before baking.

I didn't make any changes, other than using different colored peppers. I made five peppers and used yellow, orange, and red peppers. I used reduced fat sharp cheddar for my cheese.

These were some of the easiest peppers I've ever made. I love the idea of cooking the peppers slightly in the microwave first...10 minutes of cooking time at the end is fantastic! Our friend Steve was over for dinner, and we all really liked these. My kids shared one, the adults each had one, but I don't think any of us finished our entire peppers. I had enough filling for another pepper. It's actually still in my fridge because I figured it would be easy enough to just heat up a pepper, stuff it, and bake it in my toaster oven for a hearty lunch. Perhaps that will be my lunch for tomorrow!

I'll definitely make this one again, too...diet or no diet! (Don't you love finding diet food like that?!)

Veggie Pesto PIzza

I realized I forgot to mention a couple other recent happenings around here that have contributed to my lack of blog posting. I finally had Lasik done!!! I was beginning to wonder if I was not meant to ever get it because I had to change from my original date so we could go to a seminar at church (that totally wasn't worth it), then both my kids got pink eye and they wouldn't let me get it done in case I ended up getting it too (which I did). So Friday was the day, and I have to say my life has been changed!!! It was definitely creepy--reminded me entirely too much of this scene from "A Clockwork Orange"--but so worth it in the end!

The other exciting happening is that my friend Jen had her twin baby girls on Friday!!! I guess it really has nothing to do with my lack of blogging, but it's very exciting!! I got to spend a good chunk of the day at the hospital with them yesterday, and aside from my own kids, they are some of the cutest babies ever!! Warning: snuggling with two cute newborn baby girls that have red bows in their hair WILL induce baby fever. And if it doesn't, there might be something wrong with you.

Anyway, I figured Jen would come home from the hospital today or tomorrow, so I slated this dinner in case they wanted me to bring some to them, as I know it's one of their favorites as well. Jen's mom is coming to stay with them for awhile, and Jen thought she'd probably want to make them dinner, but I kept it on the menu for tonight just in case. I'm really excited to have it!! It's been awhile, and lately all we've had is pepperoni or cheese pizza, so a good, homemade, veggie pizza will be fantastic!!

Confetti Pasta Salad

I'm spending a blissful afternoon by myself!! Well, the baby is here, but he's sleeping. My mom occasionally takes the boy so they can have a special day just the two of them. Fine by me on many levels--gives me a (usually much needed) break from the boy for a few hours and time alone with the baby. I dropped him off at 11:00 and I have yet to get the call that they're on the way here and it's almost 4:00! The baby and I ran some errands this morning, came home and had lunch, then when he went down for his nap I threw in some laundry and started working on cleaning out our office. The husband and I both want to get a treadmill, and this is really the only room where one will work. We have a decent size house, but it's full of junk. Isn't it amazing that no matter how big your house is, you can fill it up with crap?! So, I'm cleaning out the office. It's been pretty labor intensive because it's where I keep all my scrapbooking stuff. I used to do a lot of rubber stamping, but I haven't in a long time so I'm cleaning out that stuff too. Want to buy some rubber stamps or accessories? Let me know. ;)

Anyway, I'm taking a break to update the blog for a bit because I've fallen so far behind. Actually I think I only have this and one other that I missed, then once I post tonight's dinner I'm caught up. I did go through last night and update some reviews and add in pictures.

Monday nights the husband and I are leading a small group for our church. It starts at 6:30, so we need to have dinner done and cleaned up by the time people show up at our house. I had bought a ham at Easter when they were super cheap, so I figured Monday was a great time to make it. I just threw it in the crockpot with some cloves stuck into it and spread some Dijon mustard and brown sugar on the top of it and called it good. Not really worth posting a recipe since there wasn't much of one. I made this pasta salad to go with it so I wouldn't have to do anything at dinnertime except dish up plates. Confetti Pasta Salad

I had to change it up a bit this time because I didn't have any ranch dressing. I did have some of the packets to make your own, so I did that instead. I have to say I liked it better that way. I bought some red, yellow, and orange bell peppers on Sunday because they were super cheap ($0.88 each!!!) but didn't really know what to do with them. I used the yellow one in a salad on Sunday night, and then I thought of this pasta salad and the stars all seemed to align. Although the only pasta I had was alphabet pasta I had bought recently at Trader Joe's. Oh well...made for a fun dinner as we all would say what letters we were eating. :)

Italian Sausage, Peppers, and Onions

This was what I needed the buns for on Wednesday night. I had bought some chicken parmesan sausage at Sprouts when they had their big sausage sale. Jen B. made this recently, and I thought I'd copy her once again. Plus peppers were on sale, so all the stars seemed to align. We were originally going to have this on Tuesday night, but we got home later than I had planned, so there wasn't time to make the buns. I cut it close on Wednesday, too, but it all worked out okay.

Italian Sausage, Peppers, and Onions
6 (4 ounce) links sweet Italian sausage
2 tablespoons butter
1 yellow onion, sliced
1/2 red onion, sliced
4 cloves garlic, minced
1-2 large red bell pepper, sliced
1-2 green bell pepper, sliced
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 cup white wine
salt and pepper to taste

Directions:
1. Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.

2. Melt butter in the skillet. Stir in the yellow onion, red onion, and garlic, and cook 2 to 3 minutes. Mix in red bell pepper and green bell pepper. Season with basil, and oregano. Stir in white wine. Continue to cook and stir until peppers and onions are tender.

3. Return sausage slices to skillet with the vegetables. Reduce heat to low, cover, and simmer 15 minutes, or until sausage is heated through.

I only changed this up slightly. I used one each of yellow, orange, and green peppers. I skipped the yellow onion and used half a red onion. I also only had three links of sausage, so that was all I used. It was really good, I love, love, love the smell of peppers and onions cooking on the stove. My house smelled awesome. One sandwich was really filling, too. I don't often have sausage in the house, but this is one I'd make again if I had all the ingredients.
