Crockpot Cheesy Spinach Artichoke Dip

Merry Christmas, everyone!! Did you have a nice time celebrating? Ours was pretty fantastic, although the days leading up to Christmas were pretty stressful, to the point where I didn't even care about Christmas and wasn't excited at all. But I had a nice, long, nine mile run on Christmas Eve that cleared my head a little and lots of family here with us for church and dinner on Christmas Eve. And with two little boys, it's hard to not catch their excitement. We were all very spoiled by my family, and now today the boys and I are hanging out at home playing with all our new toys while the husband has to go to work.

We went to my mom's house for Christmas "dinner" last night. We had our usual Christmas "dinner" spread of tons of appetizers. I had four I planned on making, but I ended up whittling it back to two. One of them I made to take to a party last Friday, and while they were tasty, they were time consuming, and I didn't want to deal with them. Then another I decided to skip after seeing how much food there was already, plus I was tired of being in the kitchen and wanted to hang out and drink my wine. It sounds like a super tasty dip, so I will make it at some point.

When I was deciding what I'd make this year I perused my Snacks board on Pinterest and got really, really overwhelmed. So many good appetizers! But I knew I wouldn't want to be in the kitchen slaving away either here or at my mom's, so the fact that this was a slow cooker recipe appealed to my lazy nature. I ended up changing it a bit because of time constraints and lack of ingredients, so there will be a link to the original recipe, but the one below is how I ended up making it.

Crockpot Cheesy Spinach Artichoke Dip
Source: Adapted from Cooking Light

1 (14-ounce) can quartered artichoke hearts, drained and coarsely chopped
1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
1 (8-ounce) block light cream cheese, softened
1 (8-ounce) carton low-fat sour cream
3/4 cup grated Parmesan cheese
1/2 cup (2 ounces) crumbled reduced-fat feta cheese
1/2 cup diced onion
1/2 cup mayonnaise
1 tablespoon white wine vinegar
1/4 teaspoon freshly ground pepper
2 garlic cloves, crushed

Place all ingredients in a 3 1/2-quart electric slow cooker; stir well. Cover with lid; cook on low-heat setting 2 hours or until cheese is melted and dip is heated through. Serve warm with toasted pita wedges or tortilla chips.

*****

The original recipe called for 3/4 cup milk. I debated calling my mom to see if she had milk because sometimes she doesn't. But I figured she would. Then she didn't. My uncle and husband both offered to run to the gas station to get some for me, but I opted to not. I figured I'd see how it turned out and if it needed some liquid, I'd come up with a solution of some sort. After it cooked for awhile, I checked on it and found the consistency of it was perfect! I was so glad I had skipped the milk; it would have been way too runny with that added to it. I had bought tortilla chips to serve with this because I have the hardest time finding pita chips at my Safeway store, and I just didn't want to go to other stores in the days leading up to Christmas. This was a super tasty dip, and it's one I will definitely make again. Tasty and easy are two of my favorite combinations!!

Do you like my festive nail polish? It was one of my gifts from Boy #1. I heart that kid!

Penne Rosa

Well, it's another rainy day at the beach. Bummer as far as my vacation fun goes, but at least I'm getting lots of blog posts done, right? We just got rid of cable at our house, so my kids are fascinated at having Cartoon Network again, so at least they're happy being cooped up inside. The sun came out briefly this morning but then quickly got rainy and then windy. I just washed, dried, and flat ironed my hair (a whole lot of good that did with this humidity, let me tell you...note snarky tone in that) in the hopes that it would help bring out the sun because then I'd want to swim but would have to sacrifice my hair to do so. Does that make sense? Basically I'm hoping that my hairstyling will have control over the weather somehow.

With that note, on to my post.

I love me a creamy pasta dish, but since I'm pretty conscious of my calorie intake and eating healthy, creamy pasta sauces are something I tend to avoid unless I'm being really indulgent. So I was pretty excited when I saw this recipe on Pinterest for a creamy pasta sauce that used Greek yogurt for the creamy aspect of it. If you haven't discovered Greek yogurt yet, you need to try it! It's super tasty and very high in protein, which I love. The husband and I go through it like there's no tomorrow. Thankfully Costco sells it for super cheap! We both like it for a fast, high-protien breakfast or snack, plain with a little honey drizzled on the top, or it's delicious with fruit mixed in as well. And you can use it in place of all sorts of things. It's fantastic!! I even used it to make boxed mac and cheese recently when I was out of milk, and the result was amazing.

Now, I'll step down off my Greek yogurt soapbox and get on with my blog post.

Penne Rosa
Source: Back to Her Roots blog via Pinterest.com

12 ounces whole wheat penne
1 tablespoon olive oil
4 cloves garlic, minced
1 pinch crushed red pepper flakes
8 ounces button mushrooms, sliced
2 medium tomatoes (about 1/2 lb.) chopped
Salt and pepper, to taste
4 cups fresh spinach
1/2 cup marinara sauce
1/3 cup 0% plain Greek yogurt
1/4 cup grated parmesan cheese

Cook penne according to package directions, omitting salt and fat. Drain and set aside.

In a large skillet with a lid, heat olive oil over medium-low heat. Add in garlic and red pepper flakes, cook for 2 minutes or until garlic begins to soften.

Add in mushrooms, tomatoes, salt and pepper. Cook for 5 minutes, or until mushrooms begin to release their water. Remove from heat, add in spinach and cover skillet. Let spinach wilt for 2 minutes.

Remove lid and place skillet back over low heat. Add the penne, Greek yogurt and pasta sauce. Stir until sauce is mixed well and all pasta and veggies are coated. Heat until just warmed through. Divide into pasta bowls and serve topped with parmesan cheese.

*****

The original recipe called for shrimp, but I left that out because I didn't have any, and my kids don't really like it anyway, plus I thought we needed a vegetarian meal because we hadn't had one in awhile. Wow that was a long sentence. That was the only modification I made. This was a pretty big hit all around with my family. I think it would be delicious with the shrimp the original post used,k but it was good on its own with just the vegetables. It's definitely something I'd make again, especially when I want a creamy pasta fix!

Mmmm...sauce.

Chicken and Spinach Pasta Bake

Ah, a quiet Monday afternoon. The husband and Boy #1 are off at a hockey game, Boy #2 is upstairs watching Dumbo, I took a power nap on the couch, rolled out some king cake dough, and decided to update my blog. I wanted to get laundry put away and clean up our toy room a bit, but since the boy is upstairs watching a movie I've decided to put all that off and deal with it later to enjoy some peace and quiet downstairs. Ahhh. I have to revel in it now because I know it won't last long!!

This was another new recipe we had for dinner this past week. I had limited grocery money to use, but I had a lot of the items for this on hand already. It came from (surprise, surprise) Pinterest. I love a good casserole and this one sounded really tasty. Pasta, chicken, spinach, and cheese? Sounds scrumptious! Oh, Pinterest, where would my life be if I hadn't discovered you. If my husband were answering that question I'm sure he'd come up with some witty comment about how our house would be clean, laundry would be done, and we'd eat dinner on time every night. But, he's not, so I'll go on with my Pinterest obsession fascination.

Chicken and Spinach Pasta Bake
Source: Adapted from Saving Money Living Life blog (found via Pinterest)

8 oz uncooked whole wheat rotini pasta
1 T olive oil
1 c chopped onion
1 (10 oz) pack frozen spinach, thawed
3 c cubed, cooked chicken breasts
1 (14 oz) can Italian-style diced tomatoes, drained
1 (8 oz) container Philadelphia chive & onion cream cheese
1 cup ricotta cheese
½ t salt
½ t pepper
1½ c shredded mozzarella cheese

Prepare pasta according to package directions. Spread oil on bottom of 9x13 baking dish; add onion in a single layer. Bake at 375 for 15 minutes or just until tender. Transfer onion to large bowl, set aside.

Drain chopped spinach well. Stir pasta, spinach, chicken, & next 5 ingredients into onion in bowl. Spoon mixture into dish & sprinkle evenly with shredded mozzarella cheese. Bake uncovered at 375 for 30 minutes.

*****

I only changed up the original recipe slightly. It called for rigatoni, but I like whole wheat pasta, but my grocery stores don't carry whole wheat rigatoni, so I used rotini instead. I also added in the ricotta because 1) I was worried it wasn't going to be creamy enough, and 2) I had some in the fridge that needed to be used up. Plus we're all about extra cheeses here at my house. The original recipe also called for baking it covered for 30 minutes and then uncovered for 15. I didn't want to wait that long to eat, and I really didn't see the point in it since all the parts were cooked already and it just had to combine and heat up. It worked out fine that way. if I had more time I might try it the original way to see how it compared.

This was a total hit with everyone in my family. The husband and I especially dug it, and Boy #2 had more than one serving. Boy #1 I guess was more lukewarm about it now that I think back to dinner that night, but he still ate most of his and didn't complain. No complaining about a dinner, I take that as a win. This is definitely something I would make again. The husband and I really enjoyed the leftovers for lunch the next couple days, too.

By the way, I calculated this to be 279 calories per serving, assuming seven servings (based on the portions I served myself and the husband).

Mexican Lasagna

Happy New Year, everyone!! Are you excited about what 2012 has in store for you? I'm hoping it has more blogging in it for me. I've kind of decided to just go forward with my blog here and potentially not go back and fill in the missing posts I had wanted to do. I don't know...I can't decide. I figure I'll start current and then when I have some time I'll add in old ones here and there. Otherwise I just get too overwhelmed and don't do anything.

My childhood best friend posted on Facebook recently about calories for a Mexican lasagna she makes. I asked her for the recipe because it sounded tasty just from the title. She sent it to me, and I had most everything on hand already, so I put it into my meal plan for the week. Worked out great because I was low on grocery money this week. I was excited to try it--and that it was low cal! 2011 was the year I got fit, so now I'm really focusing on staying that way, so tasty and low-cal recipes that come highly recommended are fantastic!

Mexican Lasagna
Source: Adapted from my friend Sarah (who has a really funny blog about Jason Segel)

1.25 pounds ground turkey
1/2 onion, chopped
Salt
Pepper
Taco seasoning
28 oz can enchilada sauce
1 medium zucchini, shredded
1 red bell pepper, diced
1 package frozen spinach, thawed and drained
1 can refried beans
4 whole wheat tortillas
2 cups shredded Mexican blend cheese

Preheat oven to 400 degrees.

Brown ground turkey and onion in skillet with salt, pepper, and taco seasoning (no more than one packet...use however much you like to taste...or throw in random taco seasoning spices like chili powder, cumin, garlic powder, oregano, and paprika if you don't have actual taco seasoning). Pour enchilada sauce into skillet and add in vegetables (you can use others, too, whatever floats your boat or what you have on hand). Simmer.

In separate pan, heat can of refried beans.

Coat a 9x13 dish with cooking spray. Spread half of the turkey and vegetable mixture in the bottom of the pan. Top with half of the refried beans, spreading to cover as best you can. Top with two whole wheat tortillas, then half of cheese. Repeat layers.

Bake at 400 for 15 minutes. Cut into eight servings.

*****

I didn't change this a whole lot from how Sarah sent it to me, just added in more veggies and used flour tortillas instead of corn. I had intended on using corn originally, but I ran out of time to make them like I'd planned and didn't have any on hand, so whole wheat flour tortillas is what I ended up using. It worked out fine...I probably could have used a couple more so the tortilla layers were thicker, but no one complained.

This was super easy to put together and SO GOOD. Well, the husband and I both thought so. My kids weren't really fans. Boy #2 ate his up once I mixed some Greek yogurt (in lieu of sour cream, which we didn't have on hand) in it to cut the spice a bit. Boy #1 picked at his even with the yogurt mixed in, but he did end up eating a decent amount of his serving. I will definitely make it again.

Oh, and I calculated it to only be 310 calories per serving! Not bad at all--and it was so filling!

Spinach and Feta Quesadillas

Have you discovered Pintrest.com yet? I'm pretty addicted to it. It's a cool way to keep track of things you come across online that you want to remember. It links up to Facebook so you can have friends and see what they're pinning too. My friend Jenn had pinned this spinach and feta quesadilla recipe recently, and I thought it looked super tasty and like it would be a great summer, hot weather, meatless dinner.

Spinach and Feta Quesadillas
Source: ClosetCooking.com

(makes 1 quesadilla)

Ingredients:
1/2 cup spinach (steamed and squeezed to drain)
1 tablespoon herbs (chopped, I used mint, dill and parsley)
1 green onion (sliced)
1 handful feta (crumbled)
salt and pepper to taste
2 (8 inch) tortillas
2 handfuls kasseri or mozzarella or jack (grated)

Directions:
1. Mix the spinach, herbs, green onions, feta, salt and pepper in a bowl.
2. Melt a touch of butter in a pan.
3. Place a tortilla into the pan, swirl it around in the butter and repeat with the second tortilla.
4. Sprinkle some cheese on the tortilla followed by the filling and then more cheese and finally the other tortilla.
5. Cook until the quesadilla is golden brown on both sides and the cheese is melted. (I placed a plate onto the quesadilla and flipped it from the pan to the plate and then slid it back into the pan.)

*****

Obviously I increased the amounts so it would feed my whole family. I steamed my spinach in the microwave which was super easy and fast. I have a microwave steamer that I put the spinach leaves in with some water and then just let it cook for a couple minutes. So easy! You could easily use frozen spinach that you thawed and drained, too. I pulled out my electric griddle to cook them so I could do more than one at a time, and it worked great.

The husband and I LOVED these. My kids, not so much. Boy #2 ate his okay, but Boy #1 said (and I quote), "This tastes like poop." To which of course I had to ask, "How do you know what poop tastes like?" Nothing like stumping a five year old. Needless to say, he was not a fan of this dinner. I thought it tasted fantastic. There was enough filling left over for a fifth quesadilla, and the husband had one for lunch the next day. I'd definitely make this again but probably just for the husband and me.

Souffle Stuffed Chicken

Before I did my meal planning for our first week of Phase One on the South Beach Diet, I went through the SBD Cookbook and made a list of what recipes sounded good. I was glad there were quite a few. I like to try new recipes (obviously), so I didn't want to do all the same things I'd made during Phase One before. This one sounded interesting. I had no idea what the Stouffer's Spinach Souffle was, but I found it easily enough at the grocery store. I figured it would be some kind of nasty, over-processed junk, but the ingredient list was actually not bad..."modified food starch" was the only thing I questioned.

Souffle Stuffed Chicken
Source: The South Beach Diet Cookbook by Arthur Agatson

4 boneless skinless chicken breasts, pounded to 1/4 inch thickness
1 (12 ounce) package stouffer's frozen spinach souffle, not thawed
2 tablespoons extra virgin olive oil
2 garlic cloves, sliced
1 cup chicken broth
2 tablespoons lemon juice
1 teaspoon Dijon mustard
salt and pepper
chopped fresh parsley (to garnish)
lemon slice (to garnish)

Preheat oven to 350 degrees F.

Using a serrated knife, cut the frozen spinach souffle crosswise into 4 equal pieces. Top half of each whole breast with one of the pieces of souffle. Fold half of the chicken over the filling and fasten edges with wooden picks.

Heat the oil in large skillet over medium heat. Add garlic and cook for 3 minutes or until golden. Add chicken breasts and cook for 7 minutes per side or until well browned.

Remove chicken to an oven-proof dish. Bake for 30 minutes or until a thermometer registers 170 degrees F when inserted into the thickest portion.

While the chicken is baking, add broth, lemon juice, mustard, salt and pepper to the large skillet. Heat to boiling then reduce to low. Cover and simmer for 20 minutes or until the sauce is reduced to 1/2.

To serve, remove and discard wooden picks. Arrange chicken on a warm serving platter and spoon sauce over the chicken. Garnish with freshly chopped parsley and lemon slices.

*****

When I talked to my friend Jen today and told her about the recipe I said that in my head it was going to taste like chicken stuffed with a really yummy spinach artichoke dip type thing. She said she didn't think that's what it would be like and not to get my hopes up. I had the idea of grating some parmesan cheese over the spinach before wrapping up the chicken, but then I forgot to add it. Oops.

Honestly I was surprised how good this was. I figured it would be gross and no one would like it, but we all really enjoyed it. The spinach souffle was a lot more flavorful than I anticipated it being. The husband said he wished he had more stuff to dip into the spinach mixture. And he even had more broccoli so he could dip it. He's never had seconds of broccoli in his life. In fact, until recently, he wouldn't even touch the stuff.

This is another dish I'll be adding to my Phase One repertoire. I'd probably even make it if I wasn't on Phase One of SBD, so that says a lot.

Chicken browning away

Ready for the oven

This is what it looks like in the book. I had my misgivings about mine compared to it.

Finished dish. Doesn't look anything like the book really, but it was still tasty. My chicken probably could have been thinner, which would have covered up the souffle more, but it worked.

Gnocchi with Spinach, Ham, and Gorgonzola

My kids are entertained with a cartoon right now (well, the boy is at least, the baby is just wandering around playing with whatever he comes across), so I figured I might as well get a little caught up on my blog while I have some peace.

This is another recipe from the America's Test Kitchen 30-Minute Suppers magazine. I had recently cooked a whole ham and of course had a ton of ham leftover from it, so I was very excited when I saw this, especially since all I needed to make it was some spinach.

Gnocchi with Spinach, Ham, and Gorgonzola
From America's Test Kitchen 30-Minute Suppers Summer 2010 Special Issue

1 pound vacuum-packed gnocchi
2 Tbsp extra virgin olive oil
6 slices deli ham, cut into 1/4-inch strips
2 garlic cloves, minced
1/4 cup toasted pine nuts
3/4 cup crumbled gorgonzola cheese
1 tsp juice from 1 lemon
2 ounces baby spinach

Bring 4 quarts water to boil in large pot. Add 1 tablespoon salt and gnocchi to boiling water and cook until tender and floating, about 4 minutes. Reserve 1/2 cup cooking water, drain gnocchi, and transfer gnocchi to paper-towel lined plate.

Heat oil in large nonstick skillet over medium-high heat until shimmering. Add gnocchi to skillet and cook until browned, about 4 minutes. Stir in ham and cook until it begins to brown, 2-4 minutes. Add garlic and cook until fragrant, about 30 seconds.

Add reserved cooking water, pine nuts, cheese, and lemon juice to skillet and stir until cheese starts to melt and sauce becomes creamy. Add spinach and stir until just wilted, 1 to 2 minutes. Season with salt and pepper to taste. Serve.

*****

This was so tasty and so easy!! The baby had three helpings, I couldn't believe it. I ended up using regular blue cheese instead of gorgonzola because I had some on hand already. And I could have sworn I had pine nuts in my freezer, but apparently I used them all. I don't think they would have contributed a ton to the flavor but the texture they would have added would have been a nice touch. We all really liked this, so I'll definitely make it again. In fact I may reserve some of the leftover ham for it!!

Quinoa Stuffed Peppers

Awhile back (okay, it was September so it was quite awhile ago I guess) I made up the filling for qunioa stuffed peppers (the link will be below). The husband thought it looked gross, so instead we ended up having some vegetarian lasagna that had been in the freezer. I couldn't let it go to waste, so I put the filling in the freezer. Once it all came together it tasted good, but by that point the lasagna was already heating up. I'd kept it in the back of my head that the filling was still in the freezer, and when I saw red peppers at Costco last Friday I decided it was time to break this out and have it. Although honestly now knowing it's been in the freezer for almost six months I'm a little hesitant. I'll have to see how it's doing once I defrost it...I may need a last minute dinner back-up plan.

Quinoa Stuffed Peppers

Strangely enough there was a stuffed peppers recipe I came across in my Weight Watchers magazine I was reading at the gym yesterday, so maybe if this isn't going to work out I'll go with that instead.

Quinoa Stuffed Peppers

The rental house we stayed at on our Seattle vacation had a few issues of Vegetarian Times magazine, so I figured I'd flip through them to get some ideas for new vegetarian dinners. Now that I'm down to just nursing the baby once a day I want to start kicking up my weight loss efforts, so I'm going to start making more vegetarian dinners (trying to get back to three or four a week) and bust out my Weight Watchers cookbooks for ideas, too.

I had some quinoa in my pantry and wasn't sure what to do with it. I saw this recipe in the VT magazine and figured I'd make it when red peppers were on sale next. Well, I didn't need to wait because Costco yesterday had a bag of six red peppers for $5.49! The cheapest I can get them at the grocery store is usually $1 each, so I snatched up a bag and put this on the meal plan for this week. I'm excited to try it!!

Quinoa Stuffed Peppers

1 medium onion, finely chopped (1 cup)
2 Tbs. olive oil
2 ribs celery, finely chopped (1/2 cup)
1 Tbs. ground cumin
2 cloves garlic, minced (2 tsp.)
1 10-oz. pkg. frozen chopped spinach, thawed and squeezed dry
2 15-oz. cans diced tomatoes, drained, liquid reserved
1 15-oz. can black beans, rinsed and drained
3/4 cup quinoa
3 large carrots, grated (11/2 cups)
1-1/2 cups grated reduced-fat pepper Jack cheese, divided
4 large red bell peppers, halved lengthwise, ribs removed

1. Heat oil in saucepan over medium heat. Add onion and celery, and cook 5 minutes, or until soft. Add cumin and garlic, and sauté 1 minute. Stir in spinach and drained tomatoes. Cook 5 minutes, or until most of liquid has evaporated.

2. Stir in black beans, quinoa, carrots, and 2 cups water. Cover, and bring to a boil. Reduce heat to medium-low, and simmer 20 minutes, or until quinoa is tender. Stir in 1 cup cheese. Season with salt and pepper, if desired.

3. Preheat oven to 350°F. Pour liquid from tomatoes in bottom of baking dish.

4. Fill each bell pepper half with heaping 3/4-cup quinoa mixture, and place in baking dish. Cover with foil, and bake 1 hour. Uncover, and sprinkle each pepper with 1 Tbs. remaining cheese. Bake 15 minutes more, or until tops of stuffed peppers are browned. Let stand 5 minutes. Transfer stuffed peppers to serving plates, and drizzle each with pan juices before serving.

*****

I'm glad I'm posting this early in the morning...I didn't realize how long it needed to bake! I'm really excited to try this. This will be my first time making (and eating, I think) quinoa. It sounds like this will be pretty flavorful, and I'm hoping it ends up that way. Not sure what we'll have with it since there's a grain in the peppers and vegetables. We may just have a salad to go with it, I'm not sure.

Pizza Night!

I know I missed a couple nights posting, but there wasn't anything new, so you're not missing out. I'm so, so, so, so, so excited for dinner tonight! It occurred to me that we hadn't had grilled pizza for one of our Friday mini date nights, so I put it on my meal plan for this week. I wasn't sure what toppings to do on each until today, although I did buy dough at Trader Joe's earlier this week. I was thinking back to pizzas we've really liked, and I remembered the veggie pesto pizza we had awhile back. I knew I had pesto in my freezer and most of the veggies in my fridge, so I decided it was meant to be. Here's my original post:

Veggie Pesto Pizza

I don't know why I feel the need to have two pizzas, but it's nice to have a little variety I guess. I was looking at another food blog that I really like, Aggie's Kitchen, and saw a pizza that looked fantastic. Actually I was looking at the pictures on her Facebook fan page and saw a picture of a different pizza that looked yummy and while searching her blog for that one I came across this pizza. How's that for confusing?! Anyway, I didn't think the husband would dig it if I told him what it was, so I sent him a picture of it from her blog and he thought it looked tasty. Actually I gave him the choice of this or BBQ chicken and he said "whatever" so I chose this...I interpret that as him thinking it's tasty. ;) I can't wait to try this!!

Spinach Alfredo Pizza
(From AggiesKitchen.com)

Spinach White Cream Sauce - melt 2-4 tb butter in saucepan over medium heat. Stir in 2 tb of flour into butter, cook for 1-2 minutes. Add 2 cups half and half to butter mixture. Add dash of salt, pepper, and fresh ground nutmeg to cream. Bring to a simmer, continually stirring to avoid bottom of pan burning. Simmer for few minutes until sauce starts to thicken. Take sauce off heat and bring to room temperature. Add 8oz thawed chopped frozen spinach to sauce.
Parmesan Cheese
Mozzarella Cheese

*****

Okay, so there isn't a real recipe I guess, but I'm going to assume that anyone reading this can figure out how to assemble a pizza. Dough, sauce, cheese, go! Doesn't it sound amazing? You should go see the picture of it on her blog...wow! The recipe title up there is a link to the post on her blog, and if you scroll down you'll come to it. Or if you're lazy like me, hit Ctrl+F to do a search and type in "spinach" and there you go.

I can't wait for dinner!! My kids' bedtime can't get here soon enough! Of course, the baby is still napping, so I'm thinking he's going to need to be woken up here soon so that he goes to bed at a reasonable time!

ETA: In a crazy twist, Jen B.--whom I originally got the pesto pizza recipe from--got the idea/recipe from Aggie's Kitchen as well! So I guess it's Aggie's Kitchen's Pizza Night at our house this evening!

*****

Mmmmmmm...these were both really good pizzas! My white sauce for the spinach pizza got a little too thick because I added an extra tablespoon of flour, forgetting it would thicken up as it cooled. oops. It wasn't bad, just a little thick. I probably could have put a little more pepper and nutmeg in it as well. I wouldn't hesitate to make it again, though. Tasty!!!

Stuffed Chicken Parmesan

Awhile back I saw a link somewhere to get a free coupon book from Eat Better America, so I signed up for it. A few weeks later I got a booklet with coupons and a bunch of healthy recipes. Sweet! This one struck me the first time I saw it, but then I forgot about it for awhile. Then I've had it on my menu for the past couple weeks but kept pushing it back for some reason. Well tonight was finally the night!! Thankfully I even found the recipe on their website, so I didn't have to type it all out--woo hoo!

Stuffed Chicken Parmesan
6 boneless skinless chicken breasts (about 5 oz each)
1 box (10 oz) Cascadian Farm® frozen organic cut spinach, thawed, well drained
2 oz 1/3-less-fat cream cheese (Neufchâtel), softened
1/4 cup shredded Parmesan cheese
1/2 teaspoon dried basil leaves
1 clove garlic, finely chopped
1/4 cup fat-free egg product
12 stone-ground wheat crackers, crushed (about 1/2 cup)
1 teaspoon dried basil leaves
1/2 teaspoon pepper
1 cup Muir Glen® organic Italian herb pasta sauce
1/4 cup shredded mozzarella cheese (1 oz)

1. Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick.
2. In medium bowl, mix spinach, cream cheese, Parmesan cheese, 1/2 teaspoon basil and the garlic until blended. Spread about 1 tablespoon spinach mixture over each chicken breast; roll up tightly. If necessary, secure with toothpicks.
3. In small shallow bowl, place egg product. In another small shallow bowl, mix cracker crumbs, 1 teaspoon basil and the pepper. Dip each chicken breast into egg product; coat with crumb mixture. Place seam side down in baking dish.
4. Bake uncovered 20 minutes. Pour pasta sauce over chicken; sprinkle with mozzarella cheese. Bake 10 to 15 minutes longer or until thermometer inserted in center of chicken reads 165°F. Remove toothpicks from chicken before eating.

The chicken breasts I used were pretty big; I cut them each in half and had just enough filling for all of them. The only thing I changed was using some homemade Italian bread crumbs I had in my freezer instead of the crackers. Oh and I used garlic powder instead of real garlic. I had some stuff for sale on Craigslist, and someone responded to one of the ads, and it turned out she is a fire fighter. We went to drop off the stuff to her at the fire station where she works, and we ended up getting a private tour of the fire station and the fire engine!! Pretty cool! But, they were out on a call when we got there, so we ended up getting home late because we had to wait a bit, which meant I was scrambling to get dinner going because I hadn't thought to take out the chicken breasts before we left. Oops.

Anyway, I'm writing this after we've eaten, so I'll let you know that it was super tasty. I LOVED it. The boy ate every bite on his plate (that doesn't happen very often). The husband said he liked it but he thought it was too much spinach. I told him next time maybe I'd cut back on the spinach and increase the cream cheese. I would definitely make this again!

Oh, and I took a picture, but the one from the website sure looks a lot nicer, so I'm just putting that in here. Cheating, I know, but it does the dish a lot more justice than my pic.

Vegetarian Frittata

Once again I've found myself in the position of needing to use up Egg Beaters from Costco before they go bad. I've done better this time than a lot of other times I've bought them, so that's good. And it means we get to have Frittata!! According to the ol' blog here, I haven't made this since July! Good golly, is it possible it's been that long?! I'm excited for it--it's a healthy, light dinner that we always enjoy. I think I'm going to make some hash browns to go with it, and I have a container of Grands biscuits in the fridge that need to be used. I might make a fruit salad to go with it, or we have regular lettuce salad, too.

It's time for another trip to the potty for the boy, so here's the link to the previous post of this:

Vegetarian Frittata

I don't think I'm changing up much, although I may use feta instead of the parmesan cheese because I also bought feta at Costco, plus I think it would lend an interesting flavor to this. Yum...I'm excited for dinner!

Portobello Penne Pasta Casserole

Alright, back to cooking!! Yesterday I just felt blah and tired and pregnant and lazy, so we had brinner (breakfast for dinner). Pancakes, scrambled eggs, and sausage. I heart brinner. I had a whole list of chores I wanted to do, and all I accomplished was planning dinners for the week and making up my grocery list. The husband wants to get back to more vegetarian dinners, so I looked at the recipes I'd saved on allrecipes.com and found this one. I thought, "Portobello mushrooms haven't been on sale in FOREVER!" Then I looked at the grocery ad, and lo and behold...portobellos were on sale!! I was tempted to eat them all week because we haven't had them in so long, but I settled on one dinner. I kind of wanted to make Portobello Parmesan because we haven't had it in forever, but this got good reviews.

By the way, it's much easier to prepare dinner if your husband is home to entertain your 2.5 year old that's been a total terror all day instead of trying to make dinner and deal with the boy at the same time. Kudos to single parents who have to do this all the time!! The husband had a meeting that ran late tonight, normally he's home to deal with the boy. Of course the boy wanted to sit on the potty while I was trying to get everything together. I hate to deny him potty time because I'd REALLY like him out of diapers, but what can you do. At least he went potty while he was sitting there. Small blessings I guess.

Portobello Penne Pasta Casserole
1 (8 ounce) package uncooked penne pasta
2 tablespoons vegetable oil
1/2 pound portobello mushrooms, thinly sliced
1/2 cup margarine
1/4 cup all-purpose flour
1 large clove garlic, minced
1/2 teaspoon dried basil
2 cups milk
2 cups shredded mozzarella cheese
1 (10 ounce) package frozen chopped spinach, thawed
1/4 cup soy sauce

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
2. Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain.
3. Heat the oil in a saucepan over medium heat. Stir in the mushrooms, cook 1 minute, and set aside. Melt margarine in the saucepan. Mix in flour, garlic, and basil. Gradually mix in milk until thickened. Stir in 1 cup cheese until melted. Remove saucepan from heat, and mix in cooked pasta, mushrooms, spinach, and soy sauce. Transfer to the prepared baking dish, and top with remaining cheese.
4. Bake 20 minutes in the preheated oven, until bubbly and lightly brown.

*****

When I first read the recipe I went, "A quarter cup soy sauce?!" but several of the reviews said they thought the same thing but it turned out fine. We'll see. It seemed like there were a lot of calories that could be cut, so I used cooking spray instead of oil to saute the mushrooms, 1.5 cups skim milk and 0.5 cups 2% milk. Oh, and even though it didn't say to do so, I drained the spinach.

And can I just say I hate cooking with margarine? I've become a butter girl through and through I guess. Normally I have some in the freezer, but I used the last of it in my cake over the weekend (which I just remembered is out in our garage fridge...it's probably lonely, I should make sure I have some tonight), so all I had was reduced fat tub margarine. Ugh. It's so oily and there's so much water in it, which means it splatters everywhere when you're heating it up. I hate cooking with it, but I had no choice.

Dinner's in the oven as I type this, we'll see how it turns out! I can't decide if I have high hopes for it or low expectations. Generally I'm a low expectations kind of girl because if you don't expect much, you won't wind up disappointed. Trust me...I've been lectured on this philosophy MANY TIMES in my life.

*****

The results? Yummy. You couldn't really taste the soy sauce like reviewers had said on the website, but I think next time I might scale it back a little anyway. The husband and I both liked it and agreed it's one to keep. The boy didn't really eat it, but he hasn't been eating much lately anyway. I think next time I might add some parmesan in as well to give it a little extra flavor. Definitely one I'll add to my portobello recipe repertoire (sp?)!

Smoked Cheese Pasta Bake

Last night was super lame dinner. Or white trash dinner...call it what you will. We had Pigs in a Blanket and I made up a box of pasta salad. See? Not worth posting. Don't feel like you missed anything.

I was trying out another neglected cookbook when looking for recipes this week. This was the Cooking Light Annual Recipes 2008, which is actually all the recipes they published in the magazine in 2007. There were lots of yummy recipes, but I was trying to find recipes that used stuff I already had on hand. All I had to buy for this was the smoked cheese (you have no idea how many times it just took me to type 'smoked').

Smoked Cheese Pasta Bake
1 pound uncooked penne (tube-shaped pasta)
1 (26-ounce) jar fat-free marinara sauce
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
Cooking spray
1 1/2 cups reduced-fat sour cream
1 cup (4 ounces) shredded smoked farmer or mozzarella cheese
1/4 cup chopped fresh basil
1/2 cup (2 ounces) grated Parmigiano-Reggiano cheese

Preheat oven to 350°.

Cook pasta according to package directions, omitting salt and fat. Drain.

Heat marinara sauce in a large saucepan over medium heat. Add salt, pepper, and spinach, stirring until blended; cook for 10 minutes, stirring occasionally. Remove from heat; stir in cooked pasta.

Spoon half of pasta mixture into a 13 x 9-inch baking dish coated with cooking spray. Combine sour cream, smoked cheese, and basil; spread over pasta mixture in dish. Spoon the remaining pasta mixture over sour cream mixture; sprinkle evenly with Parmigiano-Reggiano. Bake at 350° for 25 minutes or until bubbly. Let stand for 10 minutes before serving.

*****

I'm so dumb, I went and looked up the recipe in the cookbook to type it up and then thought, "DUH! Copy it from the website." Pregnancy brain is hitting me hard. I'm also glad I read it and posted this when I did because I forgot about the spinach. Oh, and I'm not using a jarred sauce, I made up a basic tomato sauce using crushed tomatoes, garlic, onion, and Italian seasoning. It's the same one I made when I did the Eggplant Parmesan.

I can't decide if I should cut this recipe in half or leave it as is. I don't really feel like doing the math involved to cut it in half, but a 9x13 dish of pasta always makes so much. I guess I can freeze what's left if there's a lot.

Vegetarian Frittata

I buy Egg Beaters at Costco. I'm thinking I might stop doing that. I have four cartons of them with a sell by date of August 6th. Look for lots of egg dishes over the next week or so! Or baked goods. I don't know what, but I don't want to throw them all away! When I was figuring out meals for the week I realized we hadn't had a frittata in quite awhile...especially this one! Since I have so many freakin' eggs, I figured now was a good time to make it.

Vegetarian Frittata
2 Tbsp extra virgin olive oil
1 large yellow onion, peeled and cut into 1/4-inch crescents
2 cups fresh spinach leaves, cut into a chiffonade
1 bell pepper, preferably red, roasted, peeled, seeded, and cut into 1/4-inch die
6 large eggs
1/2 tsp salt
8 grinds cracked black pepper
3/4 cup freshly grated parmesan cheese

Generously butter a 9 or 10 inch pie plate. Heat the olive oil in a saute pan. Add onions and saute until browned. Add the spinach and cook just until wilted. Stir in the roasted pepper and remove from heat. Spoon the vegetables into the buttered pie plate, distributing evenly. Let cool.

Meanwhile, beat the eggs in a larege bowl just until yolks and whites are blended. Add salt, pepper, parmesan cheese. Mix thoroughly.

When vegetable mixture has cooled, pour egg mixture over it, again making sure that the ingredients are evenly distributed. Dish can now be set aside, covered and refrigerated, for up to 8 hours before baking.

When ready to bake, preheat oven to 450. Bake for approximately 15-20 minutes, or until the edges of the frittata are golden brown and the center is set but still slightly creamy. Do not overbake. Remove frittata to a rack and let cool approximately 15 minutes. Carefully loosen frittata from the paln with a metal spatula. Slide out and continue to cool on rack. To serve either hot or at room temperature, slide frittata onto a flat surface and cut into wedges.

*****

I added in some fresh oregano and basil to the egg mixture because I had them in the fridge and they needed to be used. I also used mozzarella instead of parmesan because I just didn't feel like grating up the parm. It smells really yummy, and I'm really hungry! We're just going to have hash browns and toast with it. THe boy is having chicken nuggets because he doesn't like eggs. If I know he doesn't like it, I'm not going to force it on him. It's just not worth ruining my dinner. ;)

Grilled Pizzas

Back to the daily grind of cooking dinner! I have had a fantastic Memorial Day weekend. Hope you have too! Saturday it was just the boy and me as the husband spent the afternoon playing golf. The husband and my uncle installed a ceiling fan in our play room before golfing, so the boy and I hung out in there since it wasn't so blazing hot in there anymore. Yesterday we went to church, returned a ceiling fan at Lowe's and then hung out at home for the afternoon. My mom came over after the boy's nap and took him home with her so the husband and I could have a date night. Woo hoo for date night!!! We went and saw the new Indiana Jones movie (pretty decent, kind of cheesy ending, but worth seeing on the big screen) and went out for dinner. What a treat! This morning we were super productive...he did yard work and I worked on cleaning out our disaster area of a garage. I only got one wall of it done (hey, I said disaster area!) before our garbage can and recycle bin were full, but it's a vast improvement. Hopefully I can get the other two walls done before it gets ridiculously hot here. It's been so nice this weekend, I wish the weather would last!! I was supposed to get a pedicure today, but all the nail places around here were closed! So I got some Coldstone instead. ;) once the boy got home from my mom's, I got busy listing stuff on Freecycle and Craigslist that I had found in the garage. Hopefully it will earn me some extra moolah!

ANYWAY. Since it is Memorial Day, I figured we couldn't go all weekend without grilling, so we'd grill tonight. Actually I'll grill tonight because it's game #2 in the Stanley Cup finals, so the husband will be glued to the TV watching that and cheering on the Red Wings. I've been trying to use up things we have in our freezers and pantry, and we had an almost full pacakge of frozen bread dough, so I figured grilled pizzas were the way to go! And we haven't had them in quite awhile. I'll probably put them back in to rotation now that it's heating up because we like to grill in the summer so the kitchen doesn't get as hot.

Here's a nice tutorial on grilling pizzas if you haven't done it before:

Cooking Light's How To Grill Pizzas

My directions for it are below. I use the frozen bread dough you get at the grocery store, like Rhodes. Only I get the store brand because it's cheaper. You can also make them with the refrigerated dough from stores like Trader Joe's or Fresh & Easy. I don't think I've tried them with the Pillsbury refrigerated pizza dough, but I imagine it would work. Or you can make your own dough. I've done that before when we didn't have the frozen bread dough. I just like the frozen becaue it's cheap and easy. I'm all about cheap and easy. I make two pizzas from each loaf of frozen bread dough, then we can pick our own toppings.

Grilled Pizzas
Preheat grill to medium heat. Place dough on grill rack, close lid. Dough will take 5-7 minutes. Check it occasionally for bubbles. Once the bottom is golden brown (or at least not burned...ours don't always get golden brown I guess), flip the crust over. This can be tricky and may require two spatulas, depending on the size of your crust. Turn heat down to low or move pizza(s) to top rack if your grill has one. Put toppings on the side you just cooked. Close lid. Check after five minutes, cook until cheese is melted.

*****

Tonight I'm making four different pizzas. Last time we had grilled pizzas as a family, I found out that one loaf of dough wasn't really enough for the three of us, so I'm using two loaves tonight. We're having:

  • pepperoni
  • cheese
  • mushroom and black olive
  • spinach, roased red peppers, and caramelized onion

Normally I throw some feta on the red pepper pizza, but this baby growing inside me makes me think feta tastes like puke. So, no feta this time. Oh how I miss it so!! I haven't decided yet if I'll saute the spinach first or just throw the leaves on the pizza. I wanted to do a super veggie pizza, but I cheaped out when I was at the grocery store. Green peppers were $1.25 each!! Lordy mama that's expensive! They were the same price as red peppers. So, mushroom and black olive it will be. Which is fine with me...that's one of my favorites, and I rarely get to have it becaue the husband doesn't like olives.

Man alive, this was a long post! I'm off to continue my productive day and assemble a bookcase for our play room. It's only been sitting out in the garage since March.

    Prosciutto Ravioli

So, I thought I was being really creative with my dinner tonight. I had some prosciutto in the fridge and saw wonton wrappers on sale at the store last week, so I thought, "Cool, I'll use the wonton wrappers and make my own raviolis with prosciutto and some ricotta." Then I was reading through a Giada De Laurentis cookbook (Everyday Pasta) and saw a recipe for prosciutto raviolis using wonton wrappers. I was so bummed...I thought I'd had this great original idea, but really it was something I just tucked away in the back of my head. Lame! Oh well. Here's the recipe:

    Prosciutto Ravioli
1 (15-ounce) container whole milk ricotta cheese
1 (10-ounce) package frozen chopped spinach, thawed, squeezed dry
4 ounces thinly sliced prosciutto, chopped
    2 large egg yolks
    3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
    48 wonton wrappers
    1/2 cup (1 stick) butter
    1 1/2 teaspoons dried oregano
    Freshly grated pecorino

Whisk the ricotta, spinach, prosciutto, egg yolks, salt, and pepper in a medium bowl to blend.

Place 1 tablespoon of the ricotta filling in the center of a wonton wrapper. Brush the edge of the wrapper lightly with water. Fold the wrapper in half, enclosing the filling completely and forming a triangle. Pinch the edges to seal. Transfer the ravioli to baking sheets. Repeat with the remaining filling and wrappers. (Can be prepared up to 2 hours ahead; cover and refrigerate.)

Melt the butter in a heavy small skillet over medium heat. Add the oregano and stir 1 minute. Season, to taste, with salt and pepper. Remove from the heat.
Working in batches, cook the ravioli in a large pot of boiling salted water until just tender, stirring occasionally, about 4 minutes per batch. Transfer the ravioli to a large shallow bowl.

Pour the oregano butter over the ravioli and toss gently to coat. Sprinkle the pecorino over the ravioli and serve.

    *****

I'm using lowfat ricotta and some Egg Beaters instead of egg yolks. I also only have half a package of spinach, and I have parmesan not pecorino. This is my first attempt making something like this, so we'll see how it turns out!

    Vegetarian Frittata

Phew...finally I'm all caught up! My husband always makes dinner for me on Valentines Day, so I was off duty last night. It was such a treat! Although, he made what I had planned on having tonight, so I had to do some quick thinking. I had some spinach from the portobello pitas earlier in the week, and we haven't had this frittata in quite awhile, so that's what we're having. I also have a red pepper I need to use up. I'm excited, this is always so good!

    *****

I think I'm just going to saute my red pepper instead of roasting it. And instead of parmesan, I'm going to use feta. For one thing, I'm out of parmesan, and for another I have feta to use and think it would taste really good with this. The husband was going to happy hour after work, so we'll probably eat after the little man goes to bed.

    Spinach Artichoke Chicken

I forgot to post yesterday what we were having for dinner. I didn't so much forget, actually, as I was just lazy and never did it. It was super easy and really good. I had Bunco last Friday night, so I bought Costco's spinach artichoke parmesan dip to take. That stuff has got to be laced with crack! We still had some left, and I wanted to get rid of it, so I came up with a genius idea. I cooked chicken breasts on my grill pan (seasoned with just salt and pepper), then once they were cooked I moved them to a cookie sheet and spooned some of the remaining dip on top and stuck the pan under the broiler for a few minutes. Oh man, was it ever good! Will loved it, too.

Spinach, Mushroom, and Provolone Cheese Quiche

Forgot to post my recipe for yesterday! We waited until Will went to bed and had dinner while we watched Pirates of the Carribbean 3. I think we're probably the only people in the world that hadn't seen it. Anyway, this recipe was in one of my Pampered Chef cookbooks, and I came across it the other day while working on my cookbook indexing project (which I'll get back to if the boy keeps napping for awhile!).

Spinach, Mushroom, and Provolone Cheese Quiche
    3 eggs
    1/2 cup half and half
    2 Tbsp all-purpose flour
    1/4 tsp salt
    Dash of ground black pepper
1/2 package (10 ounces) frozen, chopped spinach, thawed, well-drained, and patted dry
    1/3 cup chopped fresh mushrooms
1/4 cup chopped red bell pepper
1/2 cup (2 ounces) shredded provolone cheese

Preheat oven to 375. Spray small baking dish with nonstick cooking spray. Whisk together first five ingredients in medium bowl. Set aside. Combine remaining ingredients, spoon into bottom of dish. Pour egg mixture over filling ingredients. Bake 30-35 minutes or until middle is set. Let stand 5 minutes before serving. Cut in half and serve.

    *****

The thing I hate about Pampered Chef cookbooks is how the recipes use the names of their products. So this one uses the "Small oval stoneware baker," so I'm not sure what that equates to. It's about 8-10 inches long and 4-5 inches wide, I would guess.

I changed a few things about this recipe. I used Egg Beaters instead of eggs, roasted red peppers, and Italian blend shredded cheese instead of provolone. And I've been inspired by Jessica Seinfeld's "Deceptively Delicious" cookbook and had just pureed some cauliflower, so I added in a spoonful. I think that and the Egg Beaters caused an increase in the cooking time, mine probably baked for closer to an hour I think.

It was okay. I don't know if it would be better without the cauliflower, but you couldn't really taste it. I like the Vegetarian Frittata I make a lot better. Not really sure what the difference is between a frittata and a quiche except that this had flour mixed in with the eggs?
