Southwest Tater Tot Casserole


I should have known that once I got the ol' blog up and running again and was enjoying writing posts that life would happen and get in the way.  At least I'm getting this post in under the two month mark from the last one!  I feel like we've just been swamped, although a good chunk of it was fun.  In the last two months my husband and I have taken a trip to Louisville, KY for a music festival and spent a weekend in NYC to see one of our favorite people get married.  Then I fractured my ankle hiking and came down with a cold.  Plus throw in there all the day-to-day stuff like working and managing kid activities and attending said kid activities, and life is just busy.  

Basically this meme is my life...


Anyway, my oldest is in Milwaukee, WI this weekend for a choral festival, so while he's gone I was trying to come up with meals he doesn't particularly like that the rest of us do.  This Southwest Tater Tot Casserole was the first one to pop in my head.  

In the summer of 2019 we were going to housesit for some friends in the Seattle area while they went on the trip of a lifetime to China.  My youngest and I made a road trip out of it on the way there and stopped in Boise to visit my lifelong BFF and her family for a few days.  We've been friends since our ages were single digits which is pretty incredible because we are both solidly in our 40s now.  We of course had a blast with them, and I loved that our kids played together like they've known each other forever.  Our last night at their house she made this for dinner.  I absolutely love tater tot casserole and have literally been eating it since I was a kid, and my kids love it, too, so Miles and I were super excited to try this version.  Once we were back home I made it for my family and was shocked when Will didn't like it.  What the heck, man?!  So now I make it if Will isn't going to be here for dinner, although sometimes he has to suck it up and have it because it's what I want to make for dinner.

The website where the recipe originally came from isn't up anymore, so luckily I had printed off the recipe at some point.  I've changed it up a little from the recipe I printed to adjust to how my family likes it.

Southwest Tater Tot Casserole

1 package ground turkey (I buy mine at Costco in packages of four)

1 can corn

1 can black beans, drained and rinsed

1 packet taco seasoning

1 large can green enchilada sauce, heat level of your choice (we like medium heat)

1-2 cups shredded cheese of your choice (Mexican blend, colby jack, cheddar, pepper jack...whatever)

1 bag frozen tater tots

Salt and pepper to taste


Preheat oven to 425.  Brown ground turkey in an ovenproof skillet sprayed with nonstick spray, seasoned with salt and pepper.  

Once the turkey is no longer pink, add in corn, black beans, taco seasoning, and 1/2 to 2/3 of the can of enchilada sauce.  Sitr to combine and let simmer on medium heat for 10-12 minutes so the flavors combine.  This will also help the enchilada sauce cook down a little.  If it looks or gets too dry, add in more enchilada sauce.

Turn off the burner and top the mixture with shredded cheese.  Arrange tater tots on top of cheese.

Move the skillet into the oven and bake for 25 minutes or until cheese is melted and tots are crispy.

Note: if you don't have an ovenproof skillet, you can use a 9x13 or 11x7 casserole dish.  Spray dish with nonstick spray and transfer skillet mixture to the casserole dish before topping with cheese.  Top with cheese then tater tots and bake as directed.

Buffalo Turkey Burgers with Blue Cheese Coleslaw


I'm on vacation in Florida right now with my two kiddos, my mom, and some extended family. We're spending a week pool and beachside with three of her cousins and their families. It's a blast so far!! My boys were in the pool for over six hours today before we pulled them out to go to the dollar store to get some beach toys. Boy #2 fell asleep in the car on the way there and is still snoozing (so I volunteered to stay back here with him), and Boy #1 is back at it, either swimming or going to play on the beach, I'm not sure.

We had a four hour plane ride yesterday, and I was alone with my kids. In my mind, they'd spend the entire flight enthralled with various new movies I'd purchased for the trip and basically leave me alone except for the occasional DVD switch or another snack (you have no idea how much food I take along on an airplane ride...it stems from a mantra of "when in doubt, feed them" from when we traveled with our boys when they were babies). While they were busy being fixated with movies I was going to spend the flight updating my blog, be one of those people typing away on my laptop on the plane. Now, if you have kids you're probably shaking your head at me right now, and I don't blame you. I should have known better. No one wanted to watch a movie for more than 10 minutes, and I was constantly picking up a backpack so they could find something else to do or trying to come up with something to entertain them. My laptop stayed packed away in my backpack in the overhead compartment the whole trip.

Sigh.

But, I'm at least hoping to get caught up on some entries while on vacation. I mean, I can't spend an entire week laying by the pool or on the beach eating tasty food and having delicious adult beverages, right? Ha! Who am I kidding? That sounds awesome, so this may very well be the only post I do. We'll see. I can't let Boy #2 sleep too long or he'll never go to bed tonight.

So...

I recently found ground turkey on sale for BOGO, which I love. And then a day or two later I happened to see this recipe on skinnytaste.com and thought it would be a perfect addition to my meal plan for the week. I wasn't sure about the coleslaw on the burger but figured it was worth a shot. Plus I don't think I've ever been disappointed with a recipe I've made from her website! And one more thing, we really love anything deemed "buffalo" so it was worth a shot!

Buffalo Turkey Burgers with Blue Cheese Coleslaw

1 1/2 cups broccoli slaw
1/4 cup skinny blue cheese dressing (recipe below)
1.25 lbs 93% lean ground turkey
2/3 cup grated carrots (grate in food processor) 
1/4 cup seasoned whole wheat breadcrumbs 
1 clove garlic, grated 
1 tbsp red onion, grated
1/4 cup Franks Hot Sauce
salt and fresh pepper
oil spray
5 slices reduced fat cheddar
5 whole wheat burger buns (I used Martin's 100 calorie Potato Whole Wheat Buns)

Directions: In a medium bowl combine broccoli slaw and skinny blue cheese dressing. Set aside. In a large bowl, combine ground turkey, carrots, breadcrumbs, garlic, onion, hot sauce, salt and pepper.

Makes 5 equal patties, 5.5 oz each. Servings: 5 • Size: 1 Burger  
Calories: 358 • Fat: 15 g • Protein: 38.3 g • Carb: 22.7 g • Fiber: 5.6 g • Sugar: 5.9

Low Fat Creamy Blue Cheese Dressing
1/2 cup crumbled blue cheese
6 oz fat free Greek yogurt
1 tbsp light mayonnaise
1 tbsp lemon juice
1 tbsp white wine vinegar
1/8 teaspoon garlic powder
salt and freshly ground black pepper

In a small bowl, mash blue cheese and yogurt together with a fork. Stir in mayonnaise, lemon juice, vinegar, and garlic powder until well blended. Season to taste with salt and pepper. Makes 1 cup.

Servings: 8  • Serving Size: 2 tablespoons •  Calories: 46.8 • Fat: 3.0 g • Protein: 2.8 g • Carb: 2.2 g • Fiber: 0.3 g

As I've mentioned before, my children are very anti-spicy food, so before adding in the Frank's I pulled out enough of the mixture for a burger patty each for them and set it aside. I was pretty liberal with the Frank's, but I really could have put more in it. Oh, and I skipped the garlic and onion and instead went for a bit each of garlic powder and onion powder. I'm lazy, and neither was enough of an amount to deal with using the real thing. We loved these burgers!! I will warn you, with the slaw on top they were very messy, but they were oh-so tasty. I would have eaten another if we'd had it, I loved it so much. The slaw on top was a great addition, too. Mellowed out the tang and heat of the Frank's and added an interesting texture. I think if you weren't a fan of blue cheese (which I just don't understand) you could easily substitute ranch dressing for the blue cheese dressing when mixing up the slaw. My kids were happy with their normal burgers, the husband and I were happy with our tasty buffalo burgers, so it was a win-win all over!!

Chinese Five Spice Turkey Lettuce Wraps


I'm super multi-tasking this afternoon...sitting here with hair color in my hair (my roots were in a sorry state of affairs), updating my blog, and watching the most recent Glee episode. Oh, how I love me some old school Michael Jackson!! I also love Aggie's Kitchen (how's that for a transition?!) and was excited when she recently posted this recipe. When we did our low carb week last week, this was the first dinner I planned. I love lettuce wraps but hadn't ever made them myself. They fit the low/no carb diet perfectly, though.

Chinese Five Spice Turkey Lettuce Wraps

1 lb ground lean turkey breast
1 medium red onion, chopped small
3 garlic cloves, minced
1 inch piece of ginger, peeled and minced
1 carrot, chopped small
2 tablespoons chopped water chestnuts
1 1/2 teaspoon 5 Spice Powder
2 teaspoons low sodium tamari (or soy sauce)
3 teaspoons rice vinegar
2 teaspoons black bean sauce
1 teaspoon agave or honey
chile garlic or chile sauce (like sriracha), for serving
Boston or iceberg lettuce leaves, washed and dried
shredded slaw mix (optional)
chopped green onions (optional)

Heat a nonstick skillet over medium heat. Coat pan with cooking spray and add onion and carrot. Cook for about 3-4 minutes, add ground turkey. Using a wooden spoon, break up ground turkey and sprinkle 5 spice powder over meat. Continue to cook until cooked through completely, about 7 minutes.

While turkey is cooking, combine tamari, rice vinegar, black bean sauce, agave, ginger and garlic in a small bowl. Add to ground turkey during the last few minutes of cooking and stir until all combined.

To serve scoop ground meat mixture into lettuce leaves, top with slaw mix, green onions and chili sauce.

I couldn't find black bean sauce, so I substituted hoisin sauce. These were super tasty!! My kids got a little frustrated trying to keep the lettuce wrapped around the filling, so they resorted to just eating the filling and lettuce separately. I'm glad I finally made these...they are definitely something we'll eat on a regular basis!

Mexican Lasagna


Happy New Year, everyone!! Are you excited about what 2012 has in store for you? I'm hoping it has more blogging in it for me. I've kind of decided to just go forward with my blog here and potentially not go back and fill in the missing posts I had wanted to do. I don't know...I can't decide. I figure I'll start current and then when I have some time I'll add in old ones here and there. Otherwise I just get too overwhelmed and don't do anything.

My childhood best friend posted on Facebook recently about calories for a Mexican lasagna she makes. I asked her for the recipe because it sounded tasty just from the title. She sent it to me, and I had most everything on hand already, so I put it into my meal plan for the week. Worked out great because I was low on grocery money this week. I was excited to try it--and that it was low cal! 2011 was the year I got fit, so now I'm really focusing on staying that way, so tasty and low-cal recipes that come highly recommended are fantastic!

Mexican Lasagna

1.25 pounds ground turkey
1/2 onion, chopped
Salt
Pepper
Taco seasoning
28 oz can enchilada sauce
1 medium zucchini, shredded
1 red bell pepper, diced
1 package frozen spinach, thawed and drained
1 can refried beans
4 whole wheat tortillas
2 cups shredded Mexican blend cheese

Preheat oven to 400 degrees.

Brown ground turkey and onion in skillet with salt, pepper, and taco seasoning (no more than one packet...use however much you like to taste...or throw in random taco seasoning spices like chili powder, cumin, garlic powder, oregano, and paprika if you don't have actual taco seasoning). Pour enchilada sauce into skillet and add in vegetables (you can use others, too, whatever floats your boat or what you have on hand). Simmer.

In separate pan, heat can of refried beans.

Coat a 9x13 dish with cooking spray. Spread half of the turkey and vegetable mixture in the bottom of the pan. Top with half of the refried beans, spreading to cover as best you can. Top with two whole wheat tortillas, then half of cheese. Repeat layers.

Bake at 400 for 15 minutes. Cut into eight servings.

I didn't change this a whole lot from how Sarah sent it to me, just added in more veggies and used flour tortillas instead of corn. I had intended on using corn originally, but I ran out of time to make them like I'd planned and didn't have any on hand, so whole wheat flour tortillas is what I ended up using. It worked out fine...I probably could have used a couple more so the tortilla layers were thicker, but no one complained.

This was super easy to put together and SO GOOD. Well, the husband and I both thought so. My kids weren't really fans. Boy #2 ate his up once I mixed some Greek yogurt (in lieu of sour cream, which we didn't have on hand) in it to cut the spice a bit. Boy #1 picked at his even with the yogurt mixed in, but he did end up eating a decent amount of his serving. I will definitely make it again.

Oh, and I calculated it to only be 310 calories per serving! Not bad at all--and it was so filling!
